First and foremost- Get a round pastry mold 10 inches wide (25 cm) and 2.5 inches high (6 cm).
- Line the baking pan with baking paper moistened with water.
BaseIngredients- 200 gr of Marie biscuit or similar.
- 80 gr of butter [1/3 cup|2.7 oz].
Process- Crush cookies to powder and mix with melted butter until a paste is formed, which will be the base of our cake.
- In the bowl put the cookie base (a finger thick).
Tips:- Melt the butter in the microwave.
- Put the base in the refrigerator for half an hour so that it hardens.
CakeIngredients- 500 g cream cheese (Philadelphia Cream Cheese) [17 oz].
- 250 g liquid cream 35% fat (of the one used to make whipped cream) [250 ml].
- 5 eggs.
- A pinch of salt.
- 100 g fresh cheese (Soft Crumbling Cheese) [3.3 oz].
- 80 g Parmesan cheese (grated) [2.8 oz].
- 200 g sugar [1 cup|7.1 oz]
- 10 g flour [2 tbsp]
Process- Stir all the ingredients except the flour until the mixture is homogeneous. At the end add the flour and mix again.

- Pour the cheese mixture over the cookie base.
- Bake with air in a preheated oven at 190 °C (374 °F) for 35 min.
- Let stand at least 3 hours in the refrigerator.
