# Ingredients
* 8 eggs.
* 1 3/4 c sugar (400 gr).
* 3 1/3 c of ground almonds (400 gr).
* 1 teaspoon of cinnamon.
# Process
* Put the eggs and the sugar in a bowl and beat the mixture well with the electric mixer.
* Add the ground almonds and a teaspoon of cinnamon, and mix with the whisk (not electric!).
* Add a pinch of salt (optional).
# Baking
* Place in a low wide pan and line with butter or baking paper so it doesn't stick.
* Bake at 320 °F (160 °C) for an hour and a quarter (1:15).
# Tips
* The cake should be slightly moist, not dry.
* If it gets too brown on top, open the oven and cover with aluminum foil on top.
* The baking time will depend on the type of oven and the pan used. Try leaving it for only one hour so that it does not dry out.
* If you reduce the amount of ingredients reduce the cooking time.
