Linsenaufstrich — Red Lentil Spread
I had been looking for a red lentil - tomato spread recipes I’ve used to make a few times and didn’t find it. So I freestyled this one.
Ingredients
| Amount | Ingedrients |
|---|---|
| 200 g | red lentils |
| 1 | bay leaf |
| 4 | juniper berries |
| 300 ml | vegetable broth |
| 1 | onion |
| 1 clover | garlic |
| 1 | middle-sized tomato |
| 5 | dried tomatoes |
| 2 tablespoon | tomato paste |
| 1 teaspoon | ginger |
| 1 tablespoon | lemon juice |
| 2 tablespoon | olive oil |
Let’s Cook!
1) Cook the lentils, bay leaf, juniper berries with the vegetable broth for about 20 minutes or until the water is soaked up.
2) Chop onions, garlic, ginger and all tomatoes and add them to the simmering lentils.
3) I’ve mixed the tomato paste, lemon juice and oil in a little cup and poured it into the lentils shortly before the cooking was done.
4) Add salt and pepper how you see fit.
5) BLENDING TIME! BRRRRRRRZ!
6) And we’re done.
The original recipe, that seems lost, included red lentils, dried tomatoes, juniper berries and ras-el-hanout.
