Tomato Soup

Ingredients

| Tomatoes | 1 kg |
| Onions | 1 big |

1) Wash and quarter tomatoes, remove stem base, chuck everything into a pot.
2) Peel and chop onions and chuck into the pot. (I quarter them usually.)
3) Add a little water.
4) Let simmer on low heat for 1 h, stir every now and then.
5) Run everything through a food mill. (I don’t have a good food mill, so I had to make do with a hand blender, a sieve and a spoon. This is were things get messy. XD)
6) Bring to the boil again and add salt and sugar to taste.
This is another soup I used to prepare for work and fill into small boxes to heat up in the microwave. Often, I added some more herbs, like basil and sometimes mozzarella, before re-heating.
I’ve once used it as a base for pasta sauce.
